Over the years, the cake changed, and in the late 1800s it found its way to New Orleans and became the outdated Mardi Gras treat. The ingredients in monarch cake vary from country to country, but the symbol remains the same: it represents the Carnival season. The New Orleans variety of the king cake is similar to a glassy coffee cake and is more like a bread than a cake. It’s usually fastened with cinnamon, and sometimes filled with custard or cream cheese. The cake is circular in shape, frosted and roofed with purple, green and gold sugar — the traditional colors of Mardi Gras. “Purple on behalf of justice, lime on behalf of faith and the gold on behalf of power,” explains David Guas, a New Orleans native and cook and owner of Bayou Bakery. “It’s a very precise cake that means a very specific time of year”

Originally, this was said to indicate baby Jesus, but over time that has changed.“Everyone continuously wants to get the baby.
